枝竹 3 - 4條[*]
薑 2片[*]

老抽[*]

鯇魚腩洗淨,下鹽、生粉拌勻醃約20分鐘備用[*]
枝竹用清水浸軟,切段備用[*]
薑去皮,切片,拍扁出味備用[*]
蔥洗淨,切段備用[*]
燒熱油鑊,下油,下薑片、蔥段爆香[*]
下鯇魚腩煎香魚身表面至兩邊金黃色,盛起備用[*]
原鑊下油燒滾,下枝竹炒勻[*]
加兩碗水,轉小火將枝竹炆至腍[*]
下鯇魚腩拌勻,下鹽、糖、生抽及老抽調味[*]
轉大火蓋上鑊蓋,煮至收乾身即可上碟[/list]
