柴魚花生豬骨粥基絲汀@簡易食譜  
準備時間: 20分鐘
烹調時間: 120分鐘
份量: 三至四人

材料:
柴魚 2條(約35克)
去衣花生 60克
豬骨 500克
米 3/4米杯(約120克)
水 3 公升
鹽 適量
油 酌量

做法:
1.把米沖洗乾淨,瀝乾水份。用1/2茶匙鹽和少許油拌勻。待20分鐘。備用。
2.把豬骨放入滾水中拖水,去血水。瀝乾水份待用。花生洗淨,泡水片刻。
3.用力把柴魚打向台邊令其鬆散(小心,會有一些乾魚肉飛散出來),用手撕開小塊。
4.用一大煲,放入3公升水,用大火煮滾。放入豬骨,再滾後,加米,花生,柴魚,轉中火煮至米爛開,約1½ 至2小時。煮至豬骨和花生稔
,並滿意粥的濃稠度。下酌量的鹽調味,即成。
