自製軟腍入味紅燒肉
大廚譚詠琪教大家自製「紅燒肉」,她提醒大家要首先完成「炒糖色」的動作,意思是用冰糖將五花腩上色,令紅燒肉更有光澤。之後再加入紹酒、老抽、花椒八角等燜煮。
